Fluffy and nutritious pancakes made with Greek yogurt, perfect for a quick breakfast or brunch.

Ingredients

Dry ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt

Wet ingredients

  • 1 cup Greek yogurt (plain)
  • ¼ cup milk or water
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter or oil

Instructions 

  • Whisk together dry ingredients in a bowl.
  • Mix wet ingredients in a separate bowl.
  • Combine wet and dry ingredients until just mixed.
  • Heat a nonstick pan, grease lightly, and pour ¼ cup batter for each pancake. Cook until bubbles form, then flip and cook until golden.
  • Repeat with remaining batter, greasing the pan as needed.
  • Serve warm with toppings of your choice.

Notes

For fluffier pancakes, do not overmix the batter.
