Fluffy and nutritious pancakes made with Greek yogurt, perfect for a quick breakfast or brunch.
Ingredients
Dry ingredients

all-purpose flour

sugar

baking powder

Wet ingredients

cup
Greek yogurt
(plain)
¼
cup
milk or water

eggs

teaspoon
vanilla extract

tablespoons
melted butter or oil
Instructions
Whisk together dry ingredients in a bowl.
Mix wet ingredients in a separate bowl.
Combine wet and dry ingredients until just mixed.
Heat a nonstick pan, grease lightly, and pour ¼ cup batter for each pancake. Cook until bubbles form, then flip and cook until golden.
Repeat with remaining batter, greasing the pan as needed.
Serve warm with toppings of your choice.
Notes
For fluffier pancakes, do not overmix the batter.
