Ingredients

Vegetables

  • 4 medium zucchinis (washed and dried)
  • 1 tbsp tablespoon olive oil
  • Salt and pepper to taste Salt and pepper (seasoning)
  • 1 lb pound ground beef, turkey, or sausage
  • 1 small small onion (diced)
  • 2 cloves cloves garlic (minced)
  • 1 cup cup marinara sauce or tomato sauce
  • 1 tsp teaspoon Italian seasoning
  • ½ tsp teaspoon red pepper flakes (optional)
  • ½ cup cup grated Parmesan cheese
  • 1 cup cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish Fresh basil or parsley (for garnish)

Instructions 

  • Preheat oven to 375°F (190°C). Grease a baking dish.
  • Slice zucchinis in half lengthwise, scoop out flesh, brush with olive oil, and season with salt and pepper.
  • Bake zucchini halves for 10 minutes. Meanwhile, cook ground meat with onions and garlic, add marinara, Italian seasoning, red pepper flakes, simmer, then mix in Parmesan.
  • Fill zucchini shells with meat mixture, top with mozzarella, and bake for 15–20 minutes until cheese melts and zucchini is tender.
  • Garnish with basil or parsley and serve hot.

Notes

For extra flavor, add a sprinkle of red pepper flakes or fresh herbs before serving.
