  • 2 cups grated zucchini
  • 1 cup corn kernels (fresh or frozen)
  • 0.5 cup all-purpose flour
  • 0.25 cup grated Parmesan cheese
  • 2 large eggs
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • to taste Salt and pepper
  • for frying Oil
  • 1 cup plain yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill or herbs

Instructions 

  • Combine grated zucchini, corn, flour, Parmesan, eggs, garlic powder, onion powder, salt, and pepper in a large bowl.
  • Heat oil in a skillet over medium heat until a small batter drop sizzles.
  • Drop spoonfuls of batter into the hot oil, flatten gently, and cook until golden brown, about 3-4 minutes per side.
  • Mix yogurt with lemon juice and chopped herbs until well blended.
  • Remove fritters, drain on paper towels, and serve warm with yogurt sauce.

Notes

For extra crispiness, fry in hot oil and serve immediately.
