Instructions
Mix chickpeas, cauliflower, chili powder, smoked paprika, garlic powder, salt, and pepper with olive oil. Roast or sauté until tender.
In a bowl, combine lime juice, yogurt, cilantro, and a pinch of salt to make the sauce.
Spread the sauce on each wrap, then add the chickpea-cauliflower mixture, lettuce, and red onion.
Roll up the wraps tightly and serve.
Notes
For extra flavor, add a squeeze of lime before serving.
