Instructions
Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5-7 minutes until softened.

Add cabbage, tomatoes, green beans, basil, oregano, pepper, and salt. Stir well.
Reduce heat, cover, and simmer for 25-30 minutes until vegetables are tender. Garnish with parsley if desired.
