Ingredients

Vegetables

  • 1 medium green cabbage, chopped
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 4 cups low-sodium vegetable or chicken broth
  • 1 large onion, chopped
  • 3-4 medium carrots, sliced
  • 2-3 stalks celery, chopped
  • 1 cup green beans, trimmed and cut into pieces
  • 3 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • to taste optional Salt (Add as desired)
  • 1 tbsp olive oil or cooking spray

Garnish

  • optional Fresh parsley or dried parsley flakes (for garnish)

Instructions 

  • Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5-7 minutes until softened.
  • Add garlic and cook for 1 minute until fragrant. Pour in broth and bring to a boil.
  • Add cabbage, tomatoes, green beans, basil, oregano, pepper, and salt. Stir well.
  • Reduce heat, cover, and simmer for 25-30 minutes until vegetables are tender. Garnish with parsley if desired.
