A vibrant and flavorful salad combining spiced beef, wholesome couscous, and fresh vegetables for a quick and satisfying meal.

Ingredients

Meat

  • 400 g lean beef stir-fry strips
  • 2 teaspoons Moroccan seasoning

Grains

  • 1 cup wholemeal couscous
  • 1 cup reduced-salt beef stock, heated

Fruits & Vegetables

  • ½ medium red onion, diced
  • 1 medium medium carrot, grated
  • 6 cups rocket (arugula)
  • 1 cup store-bought roasted red capsicum, drained, thinly sliced
  • ½ medium red onion, diced

Dairy & Condiments

  • ½ cup tzatziki or yoghurt and cucumber dip

Instructions 

  • Coat beef with Moroccan seasoning and cook in a hot pan for 2-5 minutes until browned.
  • Prepare couscous with hot beef stock, then fluff and add lemon zest, juice, and diced onion.
  • Divide rocket, grated carrot, and capsicum among bowls, top with couscous, beef, and a dollop of dip.

Notes

For extra flavor, add fresh herbs or a squeeze of lemon before serving.
