Ingredients

Protein

  • 1 large Egg (This is the protein-packed star of the show.)
  • 1 tablespoon Milk or Water (Adding a little liquid creates steam in the microwave.)
  • 2 tablespoons Diced Vegetables (Use a mix like bell peppers.)
  • 1 tablespoon Shredded Cheese (Cheddar or Monterey Jack work well.)
  • 1 small (6-inch) Tortilla (A flour or corn tortilla as the wrapper.)
  • a pinch Salt and Black Pepper (To taste, for flavor enhancement.)
  • ½ teaspoon Cooking Spray or Butter/Oil (Prevents sticking in the mug.)

Instructions 

  • Coat a microwave-safe mug with cooking spray or butter.
  • Crack the egg into the mug, add milk, salt, and pepper, then whisk until combined.
  • Stir in diced vegetables and shredded cheese.
  • Microwave on high for 60-90 seconds until set but moist.
  • Warm the tortilla, then scoop the cooked egg mixture onto it, fold, and serve.

Notes
