A vibrant and healthy sandwich packed with fresh vegetables, creamy goat cheese, and flavorful red lentil hummus.

Ingredients

Hummus

  • 3 tbsp red lentil hummus spread (see recipe for preparation)
  • 2 slices bread of choice
  • 4 leaves green leaf lettuce leaves
  • 3 thin slices tomato
  • 6 thin slices cucumber slices
  • 2 tbsp goat cheese
  • 0.25 cup jarred roasted red peppers
  • 0.25 cup fresh alfalfa sprouts
  • 2 tsp balsamic drizzle

Instructions 

  • Spread red lentil hummus on one slice of toasted bread.
  • Layer lettuce, tomato, and cucumber on the hummus side.
  • Spread goat cheese on the second slice of bread.
  • Add roasted red peppers and sprouts on top of the goat cheese.
  • Drizzle with balsamic and close the sandwich, then slice and serve.

Feel free to customize with your favorite vegetables or bread types.
