Instructions
Preheat oven to 375°F (190°C).
Rinse lentils and combine with vegetables and seasonings in a baking dish.
Add diced tomatoes and vegetable stock, stir well.
Cover tightly with foil and bake for 1½ hours, stirring halfway.
Remove foil, sprinkle cheese on top, and bake uncovered for 15 minutes until golden.
Garnish with parsley and serve warm.
