A hearty and nutritious vegetarian casserole combining lentils, vegetables, and melted cheese, perfect for a comforting meal.

Ingredients

Dried Legumes

  • 1.5 cups uncooked green lentils (rinsed)
  • 1.5 cups peeled and chopped potatoes
  • 1 medium carrot (finely chopped)
  • 0.5 cup green peas (fresh or frozen)
  • 1 stalk celery (finely chopped)
  • 1 large red onion (finely chopped)
  • 2-3 cloves garlic (minced)
  • 1 can diced tomatoes (with juices)
  • 2.75 cups vegetable stock
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red chili flakes
  • 0.25 teaspoon ground black pepper
  • to taste salt
  • 2 cups shredded melting cheese of choice
  • 2 tablespoons fresh parsley (chopped, for garnish)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Rinse lentils and combine with vegetables and seasonings in a baking dish.
  • Add diced tomatoes and vegetable stock, stir well.
  • Cover tightly with foil and bake for 1½ hours, stirring halfway.
  • Remove foil, sprinkle cheese on top, and bake uncovered for 15 minutes until golden.
  • Garnish with parsley and serve warm.
