A hearty and flavorful vegetable beef soup perfect for a comforting meal. Loaded with tender beef and fresh vegetables, it's easy to make and satisfying.

Ingredients

  • 1 tbsp olive oil
  • 2 lb beef stew meat
  • 1 1/2 cups finely diced onion
  • 8 cups beef broth (low sodium)
  • 14 oz can diced tomatoes
  • 3 bay leaves bay leaves
  • 1 Tbsp fine sea salt
  • 1 tsp freshly ground black pepper
  • 1 lb potatoes (peeled and diced)
  • 2 large carrots (peeled, and chopped)
  • 1 cup celery (chopped)
  • 1 cup green beans (cut into bite size pieces)
  • 1/2 cup green onions (chopped)
  • 1/4 cup parsley (chopped)

Instructions 

  • Heat oil in a large pot, brown beef in batches until seared.
  • Add onions and cook until softened, then pour in broth, tomatoes, bay leaves, salt, and pepper. Simmer until beef is tender (~75 mins).
  • Add potatoes, carrots, and celery; cook for 20 minutes.
  • Stir in green beans and green onions; simmer for 10 minutes. Add parsley, season to taste, and serve.

Notes

This soup is perfect for a cozy family dinner and can be stored for leftovers.
