2lbbeef stew meat
1 1/2cupsfinely diced onion
8cupsbeef broth (low sodium)
14ozcan diced tomatoes
3bay leavesbay leaves

1tspfreshly ground black pepper
1lbpotatoes (peeled and diced)
2largecarrots (peeled, and chopped)
1cupcelery (chopped)
1cupgreen beans (cut into bite size pieces)
1/2cupgreen onions (chopped)
1/4cupparsley (chopped)
Instructions
Heat oil in a large pot, brown beef in batches until seared.
Add onions and cook until softened, then pour in broth, tomatoes, bay leaves, salt, and pepper. Simmer until beef is tender (~75 mins).
Add potatoes, carrots, and celery; cook for 20 minutes.
Stir in green beans and green onions; simmer for 10 minutes. Add parsley, season to taste, and serve.
