A moist and flavorful vegan cake made with whole oranges, perfect for a healthy dessert or snack.

Ingredients

  • 1 piece medium-sized organic orange (with rind) (about 250g)
  • 250 g almond flour / blanched almond meal
  • 150 g granulated sugar
  • 85 g potato starch (or corn starch / corn flour)
  • 80 g water
  • 3 teaspoons baking powder

Instructions 

  • Weigh ingredients for accuracy; blend orange with other ingredients.
  • Mix dry ingredients separately, then combine with wet mixture.
  • Pour batter into a greased baking pan.
  • Bake at 350°F (175°C) for 45 minutes or until a toothpick comes out clean.
  • Allow to cool before serving.

Notes

This cake is best enjoyed fresh and can be stored in an airtight container for up to 2 days.
