A quick and flavorful vegan stir fry featuring crispy tofu and colorful vegetables in a savory teriyaki sauce.

Ingredients

Oil

  • 2-3 Tbsp sesame oil

Protein

  • 1 block extra firm tofu (pressed and cubed)
  • 1 Tbsp corn starch

Vegetables

  • 1 heaping cup chopped red bell peppers
  • 1 heaping cup thinly sliced carrots
  • 1 heaping cup frozen green beans
  • 1 medium white onion (thinly sliced)
  • 1 tsp onion powder (optional)
  • ⅓ cup sodium-reduced soy sauce (use tamari if gluten-free)
  • ⅓ cup water
  • 2 Tbsp sugar (brown sugar)
  • 1 Tbsp rice vinegar (or apple vinegar)
  • 3 tsp chopped garlic
  • 2 tsp chopped ginger
  • 2 tsp corn starch
  • 1/2 tsp chili flakes (optional, for spice)

Instructions 

  • Heat sesame oil in a large skillet over medium heat.
  • Add cubed tofu and cook until crispy, then set aside.
  • Stir-fry vegetables and garlic, ginger, and onion powder until tender.
  • Mix soy sauce, water, sugar, rice vinegar, and chili flakes; add to vegetables.
  • Return tofu to skillet, add cornstarch slurry, and cook until sauce thickens.

Notes

Press tofu well to remove excess moisture for crispiness.
