Vegan Garlic Chickpea Soup

A hearty and flavorful vegan soup packed with chickpeas and aromatic herbs, perfect for a comforting meal.

Ingredients

olive oil

  • 1 Tbsp olive oil (plus more for drizzling)

garlic

  • 3 large garlic cloves (minced or pressed)

spices

  • 1 tsp paprika
  • 1 tsp dried rosemary
  • ½ tsp dried thyme
  • ¼ tsp chili flakes

canned chickpeas

  • 2 cans chickpeas (15 oz each) (drained and rinsed)

potato

  • 1 large potato (diced (6 oz / 180 g))

vegetable broth

  • 2 cups low-sodium vegetable broth

salt & pepper

  • to taste salt & black pepper

Instructions 

  • Puree one can of chickpeas with its liquid until smooth.
  • Heat olive oil, sauté garlic for 1 minute.
  • Add pureed chickpeas, drained chickpeas, potato, spices, pepper, and broth. Stir well.
  • Bring to a boil, then simmer for 25 minutes, stirring occasionally.
  • Adjust seasoning, serve hot with olive oil and crusty bread.

Notes

For extra flavor, garnish with fresh herbs or a squeeze of lemon.
