A hearty and flavorful vegan soup packed with chickpeas and aromatic herbs, perfect for a comforting meal.
Ingredients

canned chickpeas

chickpeas (15 oz each)
(drained and rinsed)
potato

(diced (6 oz / 180 g))
vegetable broth

low-sodium vegetable broth
salt & pepper
to taste

Instructions
Puree one can of chickpeas with its liquid until smooth.
Heat olive oil, sauté garlic for 1 minute.
Add pureed chickpeas, drained chickpeas, potato, spices, pepper, and broth. Stir well.
Bring to a boil, then simmer for 25 minutes, stirring occasionally.
Adjust seasoning, serve hot with olive oil and crusty bread.
Notes
For extra flavor, garnish with fresh herbs or a squeeze of lemon.
