Ingredients
For the Tzatziki Sauce
1mediumcucumber(divided for grated and diced)
1cupplant-based yogurt (soy or almond)
2tablespoonsfresh dill, finely chopped
1clovegarlic, minced
1tablespoonlemon juice
Salt and pepper to taste
1mediumtomato, diced
0.25red onion, finely chopped
0.25green bell pepper, diced
4tablespoonskalamata olives, chopped
1canchickpeas, drained and rinsed
2cupslettuce, chopped
4largetortillas
Instructions
Grate half of the cucumber, sprinkle with salt, and drain excess water. Dice the remaining cucumber.
Mix diced cucumber, tomato, red onion, bell pepper, and olives in a bowl.
Mash chickpeas and combine grated cucumber with yogurt, dill, garlic, lemon juice, salt, and pepper to make the tzatziki.
Mix 3 tbsp of tzatziki into the mashed chickpeas. Spread lettuce on tortillas, add chickpea mixture, vegetables, and remaining sauce. Optionally toast wraps.
Notes
For extra flavor, lightly toast the wraps before serving.
