Delicious and healthy vegan banana walnut muffins perfect for breakfast or a snack.

Ingredients

Flour

  • 2 cups all-purpose flour

Baking soda

  • 1 teaspoon baking soda

Baking powder

  • 1 teaspoon baking powder

Salt

  • 1 1/2 teaspoons salt

Brown Sugar

  • 1 cup brown sugar packed

Bananas

  • 3 medium ripe bananas mashed

Coconut Oil

  • 1/3 cup coconut oil melted

Vanilla Extract

  • 1 teaspoon vanilla extract

Plant-based Milk

  • 1 cup plant-based milk

Walnuts

  • 1 cup chopped walnuts

Instructions 

  • Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  • Mix dry ingredients: flour, baking soda, baking powder, salt.
  • In a separate bowl, mash bananas and mix with sugar, oil, vanilla, and milk.
  • Combine wet and dry ingredients, then fold in chopped walnuts.
  • Divide batter into muffin cups and bake for 20 minutes.

Notes

For extra flavor, add a handful of chocolate chips or dried fruit.
