A vibrant and crunchy veggie sandwich layered with creamy spreads, fresh vegetables, and toasted sourdough bread for a satisfying meal.

Ingredients

Vegetables

  • 1 small Red onion (Thinly sliced)
  • 1 tablespoon Lime or lemon juice
  • to taste Salt
  • to taste Pepper

Dairy Spreads

  • 2 tablespoons Cream cheese (Softened)
  • 2 tablespoons Greek yogurt
  • 1 teaspoon Onion powder

Herbs

  • 1 tablespoon Fresh dill, parsley, chives (Chopped)

Bread & Spreads

  • 4 slices Sourdough bread (Toasted)
  • optional Butter (For spreading on bread)
  • 1 avocado Avocado (Mashed with lemon juice and salt)
  • 2 heirloom tomatoes Tomatoes (Sliced and seasoned)
  • 1 cucumber Cucumber (Thinly sliced)
  • a handful Spinach
  • a handful Microgreens
  • optional Havarti cheese (Sliced)

Instructions 

  • Mix thinly sliced red onion with lime or lemon juice, salt, and pepper. Stir occasionally.
  • Combine softened cream cheese with Greek yogurt, onion powder, and chopped herbs until smooth.
  • Preheat broiler and toast sourdough slices, optionally buttered, until golden.
  • Slice tomatoes and season with salt and pepper. Slice cucumber thinly. Mash avocado with lemon juice and salt.
  • Spread cream cheese on one toasted bread slice, mashed avocado on the other. Layer tomatoes, cucumber, microgreens, pickled onions, optional cheese, and spinach. Assemble the sandwich, cut, and serve immediately.

Notes

For extra flavor, add a squeeze of lemon or lime over the vegetables before assembling.
