Instructions
Mix thinly sliced red onion with lime or lemon juice, salt, and pepper. Stir occasionally.
Combine softened cream cheese with Greek yogurt, onion powder, and chopped herbs until smooth.
Preheat broiler and toast sourdough slices, optionally buttered, until golden.
Slice tomatoes and season with salt and pepper. Slice cucumber thinly. Mash avocado with lemon juice and salt.
Spread cream cheese on one toasted bread slice, mashed avocado on the other. Layer tomatoes, cucumber, microgreens, pickled onions, optional cheese, and spinach. Assemble the sandwich, cut, and serve immediately.
Notes
