Ingredients

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.75 cup unsweetened cocoa powder (quality)
  • 1.5 teaspoons baking soda
  • 0.75 teaspoon baking powder
  • 0.75 teaspoon coarse kosher sea salt (not fine)

Wet Ingredients

  • 2 large eggs
  • 0.25 cup sour cream
  • 0.5 cup buttermilk
  • 0.75 cup warm water
  • 0.5 teaspoon espresso powder (optional)
  • 0.25 cup vegetable oil
  • 1.5 teaspoons vanilla extract

Chocolate Add-ins

  • 2 oz finely chopped semisweet chocolate
  • 1.5 sticks unsalted butter, softened
  • 0.5 block cream cheese, softened
  • 0.75 cup powdered sugar (confectioners sugar)
  • 2 tablespoons whole milk or heavy cream
  • 0.375 cup chocolate curls or mini chocolate chips (sprinkles)

Instructions 

  • Preheat oven to 350°F (175°C). Line cupcake pans with liners.
  • Mix dry ingredients in a stand mixer on low until combined. Add wet ingredients and chopped chocolate; beat until smooth.
  • Divide batter evenly into liners using approximately ¼ cup per cupcake.
  • Bake for 18-22 minutes until tops spring back. Cool in pans for 8 minutes, then transfer to wire racks.

Notes

For extra flavor, add a shot of espresso to the batter.
