Instructions
Preheat oven to 350°F (175°C). Line cupcake pans with liners.
Mix dry ingredients in a stand mixer on low until combined. Add wet ingredients and chopped chocolate; beat until smooth.
Divide batter evenly into liners using approximately ¼ cup per cupcake.
Bake for 18-22 minutes until tops spring back. Cool in pans for 8 minutes, then transfer to wire racks.
Notes
For extra flavor, add a shot of espresso to the batter.
