A hearty and flavorful Turkish red lentil soup perfect for a comforting meal. Easy to prepare with simple ingredients and served with fresh herbs and lemon.

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 large onion (chopped)
  • 2 carrots carrots (chopped)
  • 1 rib celery (chopped)
  • 3 cloves garlic (minced or grated)
  • 1 teaspoon ground cumin
  • 2 tablespoons tomato paste
  • 2 medium potatoes (peeled and cut into small pieces)
  • 8 cups vegetable broth (add 4 cups at a time if needed)
  • 2 cups split red lentils (dried not canned)
  • 1.5 teaspoons salt
  • 2 twists black pepper
  • 1 lemon lemon (cut into wedges)
  • 1 handful flat-leaf parsley (chopped)

  • 4 tablespoons olive oil (for chili oil)
  • 1 teaspoon red pepper flakes
  • 1 clove garlic (crushed for chili oil)

Instructions 

  • Sauté chopped onion, carrots, and celery in olive oil for 4 minutes.
  • Add garlic, cumin, and tomato paste; cook for 1 minute until fragrant.
  • Add potatoes, broth, and lentils; simmer for 15-20 minutes until tender.
  • Blend the soup until smooth, then season with salt and pepper.
  • Serve with lemon wedges, parsley, and chili oil. Prepare chili oil by frying garlic, red pepper flakes, and olive oil for 1 minute.

Notes

Adjust seasoning to taste and serve with warm pita bread for a complete meal.
