Instructions
Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook until no longer pink, about 5-7 minutes.
Add salsa, salt, garlic powder, chili powder, oregano, and cumin. Cook for 1 minute until fragrant.
Stir in rice, beans, corn, and broth. Bring to a boil, then cover and simmer for 20 minutes until rice is tender.
Turn off heat, sprinkle cheese on top, cover, and let sit for 5 minutes to melt.
Fluff rice, garnish with cilantro, and serve with lime wedges and extra salsa if desired.
Notes
For extra flavor, add a dash of hot sauce or chopped avocado.
