A delicious and easy-to-make sandwich combining turkey, pesto, and fresh vegetables on crusty sourdough bread.
Ingredients
Bread
2
slices
crusty sourdough bread
2-3
tablespoons
basil pesto
(homemade or store-bought)
4-6
ounces
sliced deli turkey breast
2
slices
provolone cheese
1
each
Roma tomato
(thinly sliced)

cup
fresh baby spinach leaves
1
tablespoon
softened butter
Instructions
Spread butter on one side of each bread slice. Spread pesto on the unbuttered side of one slice.
Layer turkey, cheese, tomato, and spinach on the pesto side. Top with the second slice, pesto side down.
Grill the sandwich in a skillet over medium heat for 3-4 minutes until toasted. Flip and cook another 2-3 minutes until golden and cheese melts.
Remove from heat, let cool for 1 minute, then slice and serve.
Notes
Feel free to add extra pesto for more flavor.
