A flavorful and easy pasta salad combining tender turkey, sweet cranberries, and a creamy poppy seed dressing, perfect for a quick lunch or picnic.

Ingredients

Pasta

  • 12 oz Pasta (fusilli or rotini, uncooked)

Cooked Turkey

  • 2 cups Cooked Turkey (shredded or diced, cooled)

Dried Cranberries

  • 1/2 cup Dried Cranberries (sweetened)

Celery

  • 1 cup Celery (diced, about 2 stalks)

Red Onion

  • 1/4 cup Red Onion (finely diced)

Pecans

  • 1/2 cup Pecans (chopped, toasted (optional))

Fresh Parsley

  • 1/4 cup Fresh Parsley (chopped, for garnish (optional))

Mayonnaise

  • 1 cup Mayonnaise

Greek Yogurt

  • 1/4 cup Greek Yogurt (plain, full-fat or low-fat)

Apple Cider Vinegar

  • 2 tbsp Apple Cider Vinegar

Granulated Sugar

  • 1 tbsp Granulated Sugar

Dijon Mustard

  • 1 tsp Dijon Mustard

Poppy Seeds

  • 1 tsp Poppy Seeds

Salt

  • 1/2 tsp Salt (or to taste)

Black Pepper

  • 1/4 tsp Black Pepper (or to taste)

Instructions 

  • Cook pasta according to package instructions, then drain and cool.
  • In a large bowl, combine cooked pasta, turkey, cranberries, celery, red onion, and pecans.
  • In a separate bowl, whisk together mayonnaise, Greek yogurt, vinegar, sugar, mustard, poppy seeds, salt, and pepper to make the dressing.
  • Pour dressing over the pasta mixture and toss to coat evenly.
  • Garnish with chopped parsley if desired and serve chilled.

Notes

For added flavor, toast the pecans before adding.
