A quick and flavorful tuna pasta dish with lemon, garlic, and capers, perfect for a satisfying meal.

Ingredients

Pasta

  • 0.5 pound penne pasta (cooked according to package directions)
  • 2 tablespoons olive oil
  • 2 teaspoons minced garlic
  • 1 tablespoon capers (roughly chopped)
  • 0.25 teaspoon red pepper flakes
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons whipped cream cheese
  • 0.5 cup grated parmesan cheese (plus additional for garnish)
  • 5 ounces chunk light tuna (drained)
  • 1 tablespoon fresh chopped parsley (plus additional for garnish)
  • 2 tablespoons grated parmesan cheese (optional garnish)
  • 1 tablespoon fresh chopped parsley (optional garnish)
  • 0.5 lemon zest of half a lemon (optional garnish)

Instructions 

  • Cook penne pasta until al dente, then drain and set aside.
  • In a skillet, heat olive oil, garlic, capers, and red pepper flakes for 30 seconds.
  • Add lemon juice and cream cheese; stir until melted to form a sauce.
  • Lower heat, add pasta, parmesan, tuna, and parsley; toss gently.
  • Garnish with extra parmesan, parsley, and lemon zest before serving.

Notes

Use fresh parsley for best flavor and adjust seasoning as needed.
