A vibrant and healthy layered parfait featuring fresh tropical fruits, creamy yogurt, crunchy granola, and toasted coconut for a delightful treat.

Ingredients

Fruits

  • 1/2 cup diced pineapple bite size pieces
  • 3-4 pieces strawberries cut in bite size pieces
  • 1 piece kiwi skin removed and cut in bite size pieces
  • 1 piece mango cut in bite size pieces
  • 10 oz Coconut Yogurt (1.25 cups)
  • 1/2 cup granola (using the Coconut Cardamom Granola)
  • 2 tbsp sweetened shredded coconut
  • to taste Honey or agave syrup or maple syrup (optional)

Instructions 

  • Mix all fruits in a bowl and set aside.
  • Toast shredded coconut in microwave for 3 mins, stirring every minute.
  • In glasses, layer 4 tbsp yogurt, 2 tbsp granola, and 2-3 tbsp fruit. Repeat layers.
  • Top with remaining yogurt, granola, shredded coconut, and drizzle with honey if desired.

Notes

Use fresh tropical fruits for best flavor and presentation.
