A vibrant and healthy layered parfait featuring fresh tropical fruits, creamy yogurt, crunchy granola, and toasted coconut for a delightful treat.
Ingredients

diced pineapple bite size pieces

strawberries cut in bite size pieces

kiwi skin removed and cut in bite size pieces

mango cut in bite size pieces

Coconut Yogurt (1.25 cups)
1/2
cup
granola (using the Coconut Cardamom Granola)

tbsp
sweetened shredded coconut
to taste
Honey or agave syrup or maple syrup (optional)
Instructions
Mix all fruits in a bowl and set aside.
Toast shredded coconut in microwave for 3 mins, stirring every minute.
In glasses, layer 4 tbsp yogurt, 2 tbsp granola, and 2-3 tbsp fruit. Repeat layers.
Top with remaining yogurt, granola, shredded coconut, and drizzle with honey if desired.
Notes
Use fresh tropical fruits for best flavor and presentation.
