A comforting and flavorful tomato soup made with fresh ingredients and a creamy finish, perfect for any season.

Ingredients

Vegetables and liquids

  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons unsalted butter
  • 2 medium yellow onions (chopped)
  • 2 medium carrots (chopped)
  • 6 cloves garlic (chopped)
  • 2 tablespoons balsamic vinegar
  • 2 28-ounce cans diced tomatoes
  • 3 cups water or vegetable broth
  • 1⅓ cups full-fat coconut milk or heavy cream
  • 1 teaspoon dried thyme
  • ½ teaspoon red pepper flakes
  • 1 teaspoon sea salt (plus more to taste)
  • to taste Freshly ground black pepper
  • a handful Fresh basil leaves

Instructions 

  • Heat olive oil and butter in a large pot over medium heat. Add onions, carrots, garlic, and salt; cook for 8 minutes until softened.
  • Add balsamic vinegar, diced tomatoes, water or broth, coconut milk, thyme, red pepper flakes, salt, and black pepper. Simmer for 20-25 minutes.
  • Remove 4 cups of soup and set aside. Blend the remaining soup until smooth, then combine with the set-aside chunky soup.
  • Adjust seasoning as desired. Serve garnished with basil leaves and a drizzle of coconut milk or olive oil.

Notes

For a richer flavor, use homemade vegetable broth and fresh basil.
