A comforting and flavorful tomato soup made with fresh ingredients and a creamy finish, perfect for any season.

Instructions
Heat olive oil and butter in a large pot over medium heat. Add onions, carrots, garlic, and salt; cook for 8 minutes until softened.
Add balsamic vinegar, diced tomatoes, water or broth, coconut milk, thyme, red pepper flakes, salt, and black pepper. Simmer for 20-25 minutes.
Remove 4 cups of soup and set aside. Blend the remaining soup until smooth, then combine with the set-aside chunky soup.
Adjust seasoning as desired. Serve garnished with basil leaves and a drizzle of coconut milk or olive oil.
Notes
For a richer flavor, use homemade vegetable broth and fresh basil.
