A delicious and easy appetizer featuring toasted baguette slices topped with fresh tomato, mozzarella, and basil, drizzled with balsamic glaze.

Ingredients

Bread

  • 8 oz tomato (seeds removed, chopped)
  • 8 oz baguette bread (cut into 1-inch slices)
  • 4 oz fresh mozzarella cheese (thinly sliced)
  • 2 oz onions (chopped)
  • 4 tbsp extra virgin olive oil (divided)
  • 2 tbsp minced garlic
  • 4 tbsp balsamic vinegar
  • 2 tsp honey
  • 1/8 tsp salt
  • 0.5 oz fresh basil (chopped)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Mix 2 tbsp olive oil and garlic; brush bread slices and bake for 10 minutes.
  • Reduce balsamic vinegar by half over 8 minutes, then add honey and stir for 2 minutes.
  • Combine remaining olive oil, tomatoes, onions, salt, and basil.
  • Top bread slices with mozzarella, spoon tomato mixture, drizzle balsamic glaze, and serve.

Notes

Use fresh basil for best flavor and serve immediately.
