A fresh and flavorful Italian appetizer featuring ripe tomatoes, basil, garlic, and toasted bread.

Ingredients

Main

  • 1.5 pounds ripe tomatoes (about 7 to 8 medium tomatoes)
  • 2 large garlic cloves (1 to rub on bread, 1 minced in mixture)
  • 0.25 cup extra-virgin olive oil
  • handful sliced fresh basil (around 9 to 10 leaves, thinly sliced)
  • 1/2 lemon juice of lemon (optional)
  • 1 baguette grilled or toasty bread (about 1 baguette)
  • to taste Kosher salt and freshly ground black pepper
  • to serve flaky salt

Instructions 

  • Corn and chop the tomatoes, then place in a bowl.
  • Add olive oil, salt, pepper, minced garlic, basil, and lemon juice (if using). Toss and marinate for 20-30 minutes.
  • Slice and toast the bread. Rub toasted bread with garlic clove, top with tomato mixture, season, and sprinkle flaky salt before serving.

Notes

Use ripe tomatoes for the best flavor and adjust seasoning to taste.
