Ingredients

Canned Goods

  • 1 can chickpeas (drained and rinsed)
  • 1 piece bell pepper (diced)
  • 1 piece zucchini (diced)
  • 1 piece carrot (sliced)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste salt and pepper
  • for garnish fresh parsley (chopped)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Toss chickpeas and diced vegetables with olive oil, garlic powder, paprika, salt, and pepper.
  • Spread mixture on a lined baking sheet in a single layer.
