A deliciously crispy sandwich filled with tender shredded chicken, melted cheese, and flavorful garlic herb butter.

Ingredients

Bread

  • 4 slices sourdough bread, thick cut

Chicken

  • 1.5 cups shredded cooked rotisserie chicken

Cheese

  • 1.5 cups mozzarella and provolone shredded mix

Mayonnaise

  • 1 tbsp mayonnaise (optional)

Seasonings

  • Pinch black pepper

Butter

  • 3 tbsp unsalted butter, softened

Garlic

  • 2 cloves minced garlic

Herbs & Cheese

  • 1 tbsp chopped fresh parsley
  • 1 tbsp grated parmesan cheese

Instructions 

  • Mix softened butter, minced garlic, chopped parsley, and grated parmesan to make garlic herb butter.
  • Toss shredded chicken with mayonnaise and black pepper until coated.
  • Spread garlic butter on one side of each bread slice, then assemble sandwich with cheese, chicken mixture, and remaining cheese.
  • Top with second bread slice, buttered side up, and cook in a skillet over medium-low heat for 3-4 minutes per side until golden and cheese melts.

Notes

Cover the pan initially to help the cheese melt evenly.
