Ingredients

oil

  • 2 tablespoons olive oil

chicken

  • 1 pound cubed boneless, skinless chicken breasts

garlic

  • 1 tablespoon garlic, minced

tomatoes

  • 1 pound cherry tomatoes, cut in half

spices

  • 0.25 teaspoon black pepper
  • 0.25 teaspoon salt

herbs

  • 0.25 cup finely chopped fresh basil
  • 2 tablespoons finely chopped fresh parsley

pesto

  • 0.5 cup kale cashew basil pesto (store-bought or homemade)

zucchini

  • 2 large spiralized zucchini with excess water removed (about 4 cups)

Instructions 

  • Heat olive oil in a large skillet over medium heat.
  • Add chicken cubes and cook until browned and cooked through, about 7-8 minutes.
  • Add minced garlic and cherry tomatoes; cook for 2-3 minutes until fragrant and tomatoes soften.
  • Stir in chopped herbs and pesto, then add zucchini noodles; toss to combine and heat through for 2 minutes.

Notes

For extra flavor, sprinkle with grated Parmesan before serving.
