A delicious and wholesome dish featuring tender chicken and sweet potatoes glazed with maple and Dijon for a flavorful meal.
Ingredients

Vegetables

sweet potatoes
(about 2 lbs, peeled and cubed)
Oils & Condiments

Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C). Coat a baking dish with nonstick spray.
Toss sweet potatoes in olive oil, salt, pepper, and paprika; spread in dish.
Mix Dijon, maple syrup, soy sauce, garlic, and paprika; coat chicken breasts.
Place chicken on top of sweet potatoes and bake 25-30 mins until cooked through.
Serve hot, drizzling with leftover glaze if desired.
Notes
