A delicious and wholesome dish featuring tender chicken and sweet potatoes glazed with maple and Dijon for a flavorful meal.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts (about 1.5 lbs)

Vegetables

  • 4 medium sweet potatoes (about 2 lbs, peeled and cubed)

Oils & Condiments

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup Dijon mustard
  • 1/4 cup pure maple syrup
  • 2 tablespoons low-sodium soy sauce
  • 1 teaspoon smoked paprika

Salt and pepper to taste

Instructions 

  • Preheat oven to 400°F (200°C). Coat a baking dish with nonstick spray.
  • Toss sweet potatoes in olive oil, salt, pepper, and paprika; spread in dish.
  • Mix Dijon, maple syrup, soy sauce, garlic, and paprika; coat chicken breasts.
  • Place chicken on top of sweet potatoes and bake 25-30 mins until cooked through.
  • Serve hot, drizzling with leftover glaze if desired.

Notes

Ensure chicken reaches an internal temperature of 165°F (75°C) before serving.
