Ingredients

Meat

  • 16 ounces beef Chuck Arm Steaks (about 8 ounces each, cut 3/4 inch thick)
  • 2 medium red bell peppers (cut in half lengthwise)
  • 6 slices baguette bread (cut diagonally about 5 inches long)
  • 1 clove garlic (for rubbing bread)
  • Salt and ground black pepper Salt and ground black pepper
  • 2 cups baby spinach leaves (loosely packed)
  • 1/4 cup chopped Spanish olives
  • 2 tablespoons finely chopped fresh cilantro
  • 2 tablespoons shaved Manchego cheese
  • Cilantro sprigs (optional) Cilantro sprigs (optional garnish)
  • 1/2 cup reduced fat prepared olive oil vinaigrette
  • 2 cloves garlic, minced
  • 2 teaspoons finely chopped cilantro
  • 1/2 teaspoon smoked paprika
  • 1/8 teaspoon ground black pepper

Instructions 

  • Combine marinade and dressing ingredients in a small bowl. Marinate beef and set aside.
  • Grill steaks and bell peppers until cooked; toast bread slices and rub with garlic.
  • Slice steak thinly; dice peppers. Layer ingredients in glasses: bread, spinach, peppers, steak, olives, cilantro, and dressing. Top with cheese and garnish.

Notes

Ensure steaks are cooked to desired doneness for best flavor.
