A vibrant and flavorful pasta salad combining tender chicken, fresh vegetables, and a tangy balsamic dressing for a satisfying meal.

Ingredients

pasta

  • 1 lb pasta (rotini) (preferably Barilla)

chicken

  • 2 cups chicken, cubed (cut into 1/2-inch pieces)

vegetables

  • 1 cup cucumber, chopped (seeded, into 1/2-inch pieces)
  • 1 pint grape tomatoes
  • 0.25 cup red onion, diced (finely diced into 1/4-inch pieces)
  • 0.5 cup red pepper
  • 0.5 cup celery

cheese

  • 0.25 cup parmesan

herbs

  • 0.25 cup fresh basil leaves, chiffonade

dairy

  • 0.75 cup Greek yogurt (preferably Fage 2%)

dressing

  • 5 tbsp balsamic vinegar
  • 1.5 tbsp olive oil
  • 1.25 tsp salt
  • 0.25 tsp pepper
  • 0.5 tsp dried oregano

Instructions 

  • Cook the pasta according to package instructions, then drain and set aside.
  • In a large bowl, combine cooked pasta, chicken, and chopped vegetables.
  • In a small bowl, whisk together Greek yogurt, balsamic vinegar, olive oil, salt, pepper, and oregano to make the dressing.
  • Pour the dressing over the pasta mixture and toss to combine.
  • Garnish with Parmesan cheese and fresh basil before serving.

Notes

Chill the salad for at least 30 minutes before serving for best flavor.
