These gluten-free vegan sweet potato tortillas are soft, flavorful, and perfect for wraps or tacos. Easy to make with simple ingredients, they are a healthy alternative to traditional tortillas.
Ingredients
Sweet Potatoes
2smallsweet potatoes(steamed or boiled (no liquid / mashed))
2tbspvegan butter(or use oil (ghee))
1-2tbsphot water
3/4tspsea salt(plus dash black pepper)
1/2tsponion powder
1/2tspgarlic powder
3/4cupgluten free sourdough starter(see notes, if you don't have any)
2tsppsyllium husk
2-3tbsparrowroot flour(or other starchy flour)
1/2tspbaking powder(optional, for puffier tortillas)
Instructions
Mash steamed or boiled sweet potatoes until smooth.
Mix in vegan butter, hot water, salt, pepper, onion powder, and garlic powder until well combined.
Add sourdough starter, psyllium husk, arrowroot flour, and baking powder; knead into a dough.
Divide dough into 4 balls, roll out into thin circles.
Cook each tortilla on a hot skillet for 2-3 minutes per side until lightly browned.
Notes
Ensure sweet potatoes are well mashed for a smooth dough.
