Instructions
Preheat oven to 425°F (220°C). Toss sweet potatoes with olive oil, salt, pepper, paprika or oregano, and garlic powder; spread on a baking sheet and roast for 30-40 minutes, turning halfway.
Cook ground meat in a skillet over medium-high heat until browned. Add diced onions, minced garlic, salt, pepper, and chili powder; cook until onions soften.
Prepare chopped vegetables: dice tomato, cucumber, onion, and jalapeño; season lightly with salt.
Divide roasted sweet potatoes into bowls, top with cooked meat, cheese, and chopped vegetables. Add lettuce and optional toppings. Serve immediately.
