A vibrant and flavorful salad featuring shredded chicken coated in sweet chili sauce, fresh vegetables, and herbs for a refreshing meal.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts
  • 0.5 cup sweet chili sauce (plus extra for drizzling)
  • 1 head romaine lettuce (chopped)
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 2 pieces green onions (sliced thinly)
  • 0.25 cup fresh cilantro leaves (chopped)
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • for serving Lime wedges (optional)

Instructions 

  • Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, then cook for 6-7 minutes per side until cooked through. Let cool slightly and shred with forks.
  • Toss shredded chicken with 0.5 cup of sweet chili sauce until well coated.
  • In a large bowl, combine chopped romaine, red cabbage, carrots, green onions, and cilantro.
  • Top the salad with the sweet chili coated chicken. Drizzle with extra chili sauce if desired, and garnish with remaining green onions and cilantro. Serve with lime wedges if using.

Notes

Feel free to add more chili sauce for extra spice or lime for a zesty flavor.
