Enjoy these flavorful stuffed bell peppers, packed with savory beef, rice, and tomatoes, baked to perfection.

Ingredients

Bell Peppers

  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 cup diced tomatoes
  • 1 unit onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika

  • 1 cup shredded cheese (optional)

Instructions 

  • Preheat oven to 375°F (190°C). Prepare peppers by cutting tops and removing seeds.
  • Sauté onion and garlic until fragrant. Add beef and cook until browned. Mix in rice, tomatoes, oregano, paprika, salt, and pepper.
  • Stuff peppers with the meat mixture, top with cheese if desired.
  • Place peppers in baking dish, cover with foil, and bake for 25 minutes. Remove foil and bake 10 more minutes.

Notes

For a vegetarian version, substitute ground beef with beans or vegetables.
