Ingredients

Dry ingredients

  • 1 ½ cups whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Wet ingredients

  • 3 medium ripe bananas, mashed
  • 2 large eggs
  • ¼ cup unsweetened applesauce
  • ¼ cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ½ cup chopped walnuts or pecans (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and prepare muffin tin.
  • Mix dry ingredients in a bowl; mash bananas and combine with wet ingredients.
  • Fold dry into wet, then add nuts if desired.
  • Spoon batter into muffin cups and bake for 20-25 minutes.
  • Cool muffins in the tin for 5 minutes, then transfer to a wire rack.

Notes

For extra flavor, add a dash of nutmeg or a handful of chocolate chips.
