Ingredients

Vegetables

  • 4 medium zucchini (halved and hollowed out)
  • 1 pound ground beef or turkey
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup marinara sauce
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning

Instructions 

  • Preheat oven to 375°F (190°C).
  • Sauté chopped onion and minced garlic in olive oil until fragrant.
  • Add ground meat, season with Italian seasoning, salt, and pepper; cook until browned.
  • Mix in marinara sauce and half of the cheeses, then stuff into zucchini halves.
  • Top with remaining cheese and bake for 25-30 minutes until zucchini is tender.

Notes

For a vegetarian version, substitute the meat with cooked quinoa or beans.
