A fresh and delightful appetizer featuring hollowed cucumbers filled with creamy cheese and topped with cherry tomatoes.

Ingredients

Vegetables

  • 3 pieces English cucumbers (peeled and sliced 3/4 inch thick, hollowed with a melon baller)
  • 18 pieces grape tomatoes (halved lengthwise)

Dairy

  • 8 oz block cream cheese (at room temperature)
  • 2 tbsp mayonnaise

Herbs and Seasonings

  • 2 tbsp fresh dill weed, chopped
  • 3 tsp Hidden Valley Ranch dressing mix
  • 1/4 tsp salt

Instructions 

  • Peel and slice cucumbers 3/4 inch thick, then hollow out centers with a melon baller.
  • Mix cream cheese, mayonnaise, dill, ranch mix, and salt until smooth.
  • Fill a piping bag with the cheese mixture and pipe into hollowed cucumbers.
  • Top each with halved grape tomatoes.
  • Garnish with chives or dill for presentation.

Notes

Chill the stuffed cucumbers before serving for best flavor.
