A fresh and colorful salad featuring creamy avocados filled with a classic caprese mixture of tomatoes, mozzarella, and basil, drizzled with balsamic vinegar.

Ingredients

Avocados

  • 4 large avocados (halved and pitted)
  • 1 cup cherry tomatoes (sliced in half)
  • 1 cup mozzarella pearls
  • 3 tablespoons fresh basil leaves (chopped)
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • to taste Salt and pepper (for seasoning)

Garnish

  • optional Fresh basil leaves (for garnish)

Instructions 

  • Cut avocados in half, remove pits, and arrange on a plate. Scoop out some flesh if desired.
  • Mix cherry tomatoes and mozzarella pearls in a bowl.
  • Whisk basil, balsamic vinegar, olive oil, salt, and pepper to make dressing.
  • Pour dressing over tomato and mozzarella, toss gently, then fill avocado halves with the mixture.
  • Garnish with basil leaves and drizzle with balsamic glaze if desired. Season with salt and pepper to taste.

Notes

For extra flavor, add a drizzle of balsamic glaze before serving.
