A flavorful and vibrant dish featuring marinated chicken, fragrant rice, fresh salad, and spicy sauces, perfect for a quick street-style meal.

Ingredients

Marinade and Chicken

  • 1 each lemon, juiced
  • 2 cloves garlic, crushed
  • 1 tsp kosher salt
  • 1 tsp smoked paprika or sweet, or hot
  • 0.75 tsp ground coriander
  • 1.5 tsp ground cumin
  • 1 tbsp olive oil (plus extra for cooking)
  • 2 pounds boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 0.5 tsp ground turmeric
  • 0.75 tsp ground cumin
  • 2 cups basmati rice
  • 3.5 cups chicken stock
  • 1 tsp kosher salt

Salad

  • 1 head romaine lettuce, chopped
  • 2 medium tomatoes or cherry tomatoes, chopped
  • 0.5 small red onion, sliced

Dressing

  • 0.8 cups plain whole milk yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp distilled white vinegar
  • 0.5 tsp sugar
  • 0.5 tsp kosher salt
  • 1 tbsp hot sauce
  • 1 tbsp harissa

Garnish and Serving

  • to taste fresh cilantro, chopped

Flatbread or Pita

Instructions 

  • Marinate chicken in lemon juice, garlic, salt, paprika, coriander, cumin, and olive oil for at least 30 minutes.
  • Cook chicken in a hot pan until browned and cooked through, then chop into bite-sized pieces.
  • Toast rice with turmeric and cumin, add chicken stock and salt, then simmer covered for 15 minutes. Rest for 5 minutes.
  • Prepare salad with lettuce, tomato, and onion; season with salt and pepper. Make white sauce and hot sauce mixture.
  • Combine cooked chicken with rice, then serve on flatbread or pita, topped with sauces, cilantro, and salad.

Notes

For extra flavor, marinate the chicken overnight and serve with warm flatbread.
