A delicious and healthy layered parfait combining protein-rich Greek yogurt, sweet strawberries, and nutritious quinoa for a perfect breakfast or snack.

Ingredients

Cooked Quinoa

  • 2 cups cooked and cooled white quinoa

Liquid

  • 0.25 cup unsweetened almond milk
  • 2 Tablespoons pure maple syrup (divided)

Flavorings

  • 1 teaspoon vanilla
  • pinch sea salt

Greek Yogurt

  • 1 cup plain Greek yogurt ((I like Stonyfield organic))

Fresh Berries

  • 2 cups chopped strawberries

Instructions 

  • Cook 1 cup dry quinoa, cool, and chill for 1-2 hours.
  • Mix 2 cups cooled quinoa, almond milk, 1 tbsp maple syrup, vanilla, and salt.
  • Combine Greek yogurt with remaining 1 tbsp maple syrup.
  • Layer quinoa mixture, yogurt, and berries in glasses. Repeat layers and top with berries.

Notes

Prepare the quinoa ahead of time for quick assembly.
