A flavorful and easy-to-make bowl featuring tender chicken, broccoli, and rice topped with spicy mayo and sesame seeds.

Ingredients

Rice

  • 2 cups uncooked rice

Broccoli

  • 2 small heads broccoli, chopped

Chicken

  • 3 large chicken breasts

Sauces & Oils

  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano

Sauce ingredients

  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic, minced
  • 2 tbsp sriracha
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder mixed with water (to make slurry)

Spicy Mayo

  • 1/2 cup mayo
  • 1 tbsp sriracha
  • 2-3 tbsp water (to thin mayo)

Toppings

  • to taste sesame seeds (for topping)

Instructions 

  • Cook rice and set aside.
  • Season chicken, cook until golden.
  • Steam or sauté broccoli until tender.
  • Combine sauce ingredients, simmer until thickened, then add chicken.
  • Mix mayo with sriracha and water for spicy mayo.
  • Assemble bowls with rice, chicken, broccoli, drizzle spicy mayo, and top with sesame seeds.

Notes

Use fresh ingredients for best flavor. Adjust spice level to taste.
