A flavorful and customizable rice bowl featuring marinated steak, fresh toppings, and a creamy lime-yogurt drizzle.

Ingredients

Meat

  • 1.5 pounds flank steak or skirt steak
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Cooked Rice

  • 2 cups jasmine rice cooked
  • 1 tablespoon olive oil or butter
  • Zest of 1 lime lime zest
  • 2 tablespoons fresh lime juice
  • ¼ cup fresh cilantro chopped

Toppings

  • Diced avocado avocado (diced)
  • Chopped tomatoes tomatoes (chopped)
  • Thinly sliced red onion red onion (sliced)
  • Fresh cilantro cilantro (additional for garnish)
  • Lime wedges lime wedges
  • ½ cup sour cream
  • 2 tablespoons lime juice or Greek yogurt
  • Pinch salt (for yogurt)
  • Splash water to thin only if needed

Instructions 

  • Mix olive oil, lime juice, garlic, cumin, chili powder, paprika, salt, and pepper. Marinate steak 30 min to 8 hrs.
  • Heat skillet and sear steak 3-4 min per side. Rest 5 min, then slice against grain.
  • Fluff rice with lime zest, lime juice, cilantro, olive oil, and salt.
  • Prepare yogurt drizzle by mixing lime juice, Greek yogurt, and a pinch of salt.
  • Layer rice, steak, and toppings in bowls. Finish with lime juice and drizzle of yogurt sauce.

Notes

Adjust toppings and spice levels to taste. Use fresh ingredients for best flavor.
