Ingredients

Rice Paper Wrappers

  • 8 sheets rice paper wrappers (10 inch)
  • 12 oz cooked shrimp (peeled, tails removed)
  • 2 cups romaine lettuce (thinly shredded)
  • 1 cup cooked rice vermicelli noodles (optional)
  • 1 cup cucumber (cut into matchsticks)
  • 1 cup carrots (shredded or matchsticks)
  • 0.5 cup fresh mint leaves
  • 0.5 cup fresh cilantro leaves
  • 0.5 cup plain Greek yogurt or mayo (for richer dip)
  • 1.5 tbsp lime juice (plus more to taste)
  • 1 tbsp sriracha (adjust heat level)
  • 1 tsp honey (optional)
  • 1 clove garlic (finely grated)
  • 0.25 tsp salt (to taste)

Instructions 

  • If using noodles, cook vermicelli according to package directions. Rinse cold and drain well.
  • Whisk yogurt, lime juice, sriracha, honey, garlic, and salt until smooth. Thin with water if needed.
  • Prep fillings: shred lettuce, slice cucumber, halve shrimp if large.
  • Dip rice paper in warm water for 5-8 seconds, place on damp surface, layer fillings, then roll tightly, folding sides.
  • Repeat with remaining ingredients. Serve immediately with dip or chill up to 24 hours, keeping dip separate.

Notes

Keep the dip separate until serving to prevent rolls from becoming soggy.
