Instructions
If using noodles, cook vermicelli according to package directions. Rinse cold and drain well.
Whisk yogurt, lime juice, sriracha, honey, garlic, and salt until smooth. Thin with water if needed.
Prep fillings: shred lettuce, slice cucumber, halve shrimp if large.
Dip rice paper in warm water for 5-8 seconds, place on damp surface, layer fillings, then roll tightly, folding sides.
Repeat with remaining ingredients. Serve immediately with dip or chill up to 24 hours, keeping dip separate.
Notes
Keep the dip separate until serving to prevent rolls from becoming soggy.
