A vibrant and dairy-free spinach pasta sauce that's quick to make and packed with flavor.

Ingredients

Main ingredients

  • 3 oz fresh spinach
  • 1 handful fresh basil
  • 1 cup light coconut milk (canned)
  • 2 tbsp nutritional yeast
  • 1 tbsp cornstarch (or potato starch)
  • 2 cloves garlic
  • 1 tsp onion powder
  • ⅓-½ tsp salt (to taste)
  • to taste Black pepper
  • 1 pinch nutmeg

Instructions 

  • Blend all ingredients until smooth.
  • Transfer to a saucepan and bring to a boil, stirring.
  • Simmer for 1-2 minutes, stirring frequently.
  • Serve with cooked pasta or grains.

Notes

You can adjust salt and pepper to taste for best flavor.
