Instructions
Preheat oven to 375°F (190°C) and grease an 8×8-inch baking dish.
Whisk eggs and cottage cheese until combined.
Fold in spinach and optional ingredients; season with salt and pepper.
Pour into dish and spread evenly.
Bake for 30–35 minutes until set and golden.
Cool for 10 minutes before slicing.
