Ingredients

Pasta

  • 12 ounces medium pasta rotini or bow ties (Whole wheat pasta can be a healthier substitute.)
  • 1 cup sour cream (Swap with Greek yogurt for a lighter texture.)
  • ¾ cup mayonnaise (Consider using light mayonnaise to cut calories.)
  • 1 package 1.4 oz vegetable soup mix (Create your own blend of seasonings for a homemade touch.)
  • 3 green onions sliced green onions (Adds fresh crunch and mild sharpness.)
  • 1 can 14 oz artichokes (Water-packed, drain and quarter before adding.)
  • 4 cups fresh spinach (Chopped lightly packed.)

Instructions 

  • Cook the pasta according to package instructions, then drain and let cool.
  • In a large bowl, combine sour cream, mayonnaise, and vegetable soup mix to make the dressing.
  • Add cooked pasta, sliced green onions, chopped spinach, and quartered artichokes to the bowl. Toss to combine.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

For a lighter version, substitute Greek yogurt for sour cream and light mayonnaise.
