A delicious vegetarian pasta bake combining creamy ricotta, fresh spinach, and melted cheese, baked to perfection.

Dried Pasta

ricotta (or mascarpone)

mozzarella or cheddar cheese (grated)

Instructions
Cook pasta in salted water, drain, and set aside.
Mix ricotta, mozzarella, and grana padano in a bowl. Add cooked pasta, some pasta water, spinach, and season.
Combine passata, oregano, garlic oil, salt, and pepper to make the sauce.
Layer pasta mixture in a baking dish, pour sauce on top, sprinkle with extra cheese, and bake at 220°C for 20-25 mins until golden.
Notes
Use vegetarian-friendly cheeses like mascarpone and grana padano for a fully vegetarian dish.
