6largeeggs(Protein source)
5ouncesbaby spinach(Fresh or thawed frozen)
½mediumonion(Finely chopped)
2clovesgarlic(Minced)
½cupshredded cheese(Cheddar, mozzarella, feta, or your favorite)
1tablespoonolive oil(For sautéing)
½teaspoonsalt(To taste)
¼teaspoonblack pepper(Freshly ground)
Pinchoptional spices(Paprika, cumin, or oregano)
Instructions
Finely chop the onion and mince the garlic. Sauté onion in olive oil for 3-4 minutes, then add garlic and cook for 1 minute. Add spinach and cook until wilted, then set aside.
Whisk eggs with salt, pepper, and optional spices. Pour into the skillet with spinach and scramble until just set.
Warm the wraps briefly in a skillet or microwave. Divide the egg and spinach mixture onto each wrap, sprinkle with cheese, then fold and roll.
Optional: Grill or pan-fry the wraps for 1-2 minutes per side until golden and crispy. Serve immediately.
